This may be really easy to do, but I can not find where I can turn the light off that shines when I focus the camera. I've looked in the manual and Mastering The Nikon 600 book (where I learned about nikonians). What am I missing?

Searching the C600 manual for the word "assist" brought up Custom Settings menu entry a7 on page 223. That should let you turn it off.
On my D300s it only comes on when in single-shot mode, not in continuous, so that is another way to turn it off. I usually have the camera in continuous. If I want one shot I simply release the shutter, or for many shots I keep it held down - no AF assist light and no need to switch between single and continuous, just stay on continuous.
