AF one point, and spot meter a different point

I have started to use Live View for landscape photography with my D800. I have also started to use Live View zoom to check to see that the camera/lens has properly focused on my chosen focus spot. I also use the hyperfocal distance technique of focus along with aperture shooting mode. I use back-button focusing.

What I am finding with landscape photography with dark foregrounds is that my images are way over exposed in the top portion of the image because the camera is both focusing and light metering in the same low spot. I have been using bracketing shooting to get an image with darker background and skies.

Today I think I discovered a way to focus in one point and spot meter in another to get both focus and light metering the way I want it. I use Live View to focus low then turn Live View off to take my pic with the thru-the-len focus spot higher up in the image. I do not re-focus with the back button, and I push the shutter button down slowly to be sure the camera has time to spot meter.

Do any of you use this technique of separating the focus point from the light metering point with a D800?
