800 a better DX cam than 300s?

I know this sounds a bit like putting the cart before the horse, but.....

How does the D800 do in DX mode compared to the D300s and/or D7100?

I'd be using it with my Sigma 50-500OS, so, if my subject was 'in range' of 500mm, I could use the 800 as it's maker intended, in FX mode.

I think that would yield better results than the same lens on my 300s.

At longer ranges though, using the D800 in DX mode, would it do much better than my 300s or the D7100?

I'm an utter pixel peeper, (hard cropper-inner) as often I just cannot get close enough.

If only Nikon would put an 'AF_ON' button on the D7100, it would likely do me fine.
