D800 and D3S ISO Question

I am going to shoot a wedding and the light will be a little low, 1900 central time. Some people have recommended to me that I set the ISO max to 6400. I did a test last night at about the same time of the wedding and shot with no flash. The pictures came out with lots of grain. Should I set the ISO to Auto and maybe set it for Low 100 and high ISO 800? What about when I need to use a strob?
