Long Milky Way Exposure - Noise Reduction?

I read something about taking a reference photo with the lens cap on and doing some kind of procedure in PhotoShop as a way to eliminate noise.

Would somebody please help me understand how I do that and process the photo?

How does the process differentiate between noise and the very faint stars that make up the milky way image?
