18% Gray Cards - how to use

Hi,

I am trying to improve my photo shootings, especially product shooting and portraits. I don't have a light meter, that's something that I will be looking into in the future.

For now, I have read that an alternative way to a light-meter is to use a gray card. I have been through several youtube tutorials and I am a little bit confused and have a couple of questions.

1. is the gray card only useful for post processing? Most of the tutorials suggest to take a photo with the exact light conditions of my photos. One of them should include a gray card. In post processing, all I have to do is to tell my software to fix the exposure based on that grey color, as captured in my photo.

This is fine by me, but what if I don't want to post process?

2. another tutorial suggested to place my gray card in front of my subject. Focus, properly expose on that card but don't shoot. Remove the card and just shoot! (assuming that the card is at the same distance of my subject, focusing won't be a problem).

Will this work?

Forgot to mention, what I am looking out of this is to ensure that my White color is really white and that my black is ... truly black!
