Manual video settings...HELP!

It always seems like I'm always under the gun when I have to learn how to do something new with my D7000. This time it's video. Have to make a video for client coming in the door next week. ARGH!

The situation:
Interior; mixed incandescent and florescent lighting.
Fixed shot (tripod), but I need to have control of white balance and exposure. Not sure about shutter speed, but the subject moves like a human would.

Can someone please point me in the right direction to set up the camera to do this? I know how to save the settings in U1 or U2, but cant figure out what to start out with and how to adjust exposure. P,S,A,M? Auto doesn't work; I learned that so far.does video work the same as stills?

Any ideas?
