If I adjust the picture controls say to "vivid" is there any way this is recorded in the exif file so I can later retrieve this information?
I use iMatch to organize images and it is pretty good about letting you display these things with your images, but I am not sure where this one is on the D7000 exif.

It's already recorded for you. It shows up under Picture Controls in the metadata. Your software may not be able to read that portion of the data file.

It is recorded but it may depend on your software if it can be read. View NX shows all of the picture control settings but Opanda IExif does not show the picture control settings.

Some Exif reader/editor programs can read this information in the MakerNote section of the Exif data. As noted only Nikon software, Nikon View NX 2 and Nikon Capture NX 2, read and use this data.
