Big Horn at Red Rock - D80. Do I move to D7000?

I'm VERY amateur to start. I love photography and I feel I have a solid eye for it, but don't have much time. That being said, I plan on spending more time here and in Utah doing photography.

I took this last weekend at Red Rock. I was privy to 3 big horn sheep climbing the mountain. I was probably 50 feet down, and for this shot probably 150 yards??? Hard to estimate with the vertical distance as well. It was quite a ways though.

Taken with a D80 and an AFS Nikkor 18-200 lense.

I had iPhoto blow it up as I plan on framing and putting them as art in my new office. It got here yesterday 20" by 30". It looks good - good enough for the office when it's framed.

My wife thinks I'm crazy, but I'm not entirely thrilled with a very rare photo opp. Case in point see pic with the three of them above me staring down - odd angle, odd look, great picture - how often to you look up and see that? That picture is classic.

The pic looks a little washed out to me, and from that distance it was tough. But I can't help feeling if my setup was a bit nicer of lense (300), and possibly moving to the D7000 I would have ended up with a crisper picture.

Looking for opinions, constructive criticism welcome! Most importantly - would the D7000 over the D80 make a difference in picture quality? Remember I'm printing them 20" by 30" for my company office, and I NEED them to look professional top-notch. What about the lense? What would you recommend?

I'm willing to upgrade and have the money - nothing outrageous, but since I'm saving thousands of dollars on art for the office (the prints through iphoto are only $15, frames I plan on buying online) it's a worthwhile investment for me.
