Help with AF modes

Ok, I'm still having problems with the AF modes on my D7000 and which is appropriate for various types of shots. I will be at a horse race event tomorrow and need to know what you all think would be the best setting to use (I generally shoot in manual mode most of the time and do not want to use scene mode). It will be out doors, tons of light, very fast horses, and I can get close to the action; 30-50 feet. I use Darrell Young's book as a reference and have figured that the AF-C mode might be best. However I suspect that the predictive focus tracking may not recognize horses (horse color verses background color). But I'm still confused on all of this.

If some of you would be so kind as to advise I would really appreciate it!
