The Picture Control Grid shows the values for the various Picture Control settings on a twin axis grid displaying Contrast and Saturation.
My question is -
Are these the only to parameters altered when switching between the various picture control settings or do other factors come into play?

I believe sharpeness and other factors come into play. You may see the differences in the adjustment display, the grid is a quick comparision and does not represent all the values.

Dave, the picture controls are presets, packages of multiple settings. These settings include the contrast and saturation indicated on the grid but are not limited to those two items. Items include Sharpening, contrast, brightness, saturation and hue. I don't believe that the absolute vales of the parameters exposed but you are given the opportunity to make adjustments to the values from the presets. Using the utility you can even create a custom tone curve and save your own picture control package.
The grid simply shows where your picture control is located in the saturation-contrast dimension but certainly provides no information on the other elements within the picture control.
I guess that I may not really understand your question as my answer seems rather obvious.
