It depends upon the type of bird and the distance between the bird and me. The pelicans are rather "slow" and I shot the takeoff at 1/500. Whereas the stilts and ducks were shot at 1/1600. Since I was relatively close to the geese, they were shot at 1/1600 too. All of the photos in the video were shot with a 70-300 VR.
The particular area where we did this segment is next to a water treatment plant on the southern tip of San Francisco Bay with Yahoo and Lockheed within walking distance. When I shoot here, I don't go camo and use a relatively light lense - 70-300 VR since I can get relatively close to the birds. On the day of the shoot, it was windy and a bit warm so I didn't even get to demo the use of a blind.
