image overlay better than layers in photoshop

Hi,

I read on page 359 of the D700 manual that image overlays done in camera are "noticeably better than overlays created in imaging applications". The manual continues to say that this is because raw data is used...Can someone explain why exactly the improvement say over layers in photoshop done with tiff data...

Can image overlays be used to create exposure blends of two images with a high dynamic range - one bracketed at -1 ev say, and 1 at +1 ev?
