Travelling to Hong Kong

I will be in Hong Kong for three weeks in November. I would like to bring the following lenses with me: Sigma 8-16mm, Nikkor 24-70mm, and Nikkor 70-200mm. I will bring my D7000 and rent a Nikon 1 V1 since I am contemplating purchasing one in the near future and I can use the FT-1 adapter with my current lenses. It has been two years since I have been to Hong Kong so I want to take better photographs. I will visit some of the places I have been before such as the Po Lin Monastery and Victoria Peak to take better landscape photographs. I would like to try night time photography during the "light show" that takes place in Hong Kong Island (need to buy a remote cable release). Instead of bringing my tripod I will see if I can purchase one in Hong Kong and leave it at my grandparent's home for future use. I would like to visit Macau as I remember there was a Casino with the Chinese Zodiac which I did not take a great photo of. Are there any other locations that fellow travelers might recommend? I was thinking about visiting Tai O, Sai Kung, and Stanley Market as well (somewhat touristy but I need more practice with composition).
