Applying a Profile

In Capture NX2, one has the choice of applying a profile or converting to a profile. In particular, applying a profile displays the given image in the the new color space. This usually results in a noticeable change in the image.

I am not asking for an explanation of what applying/converting mean. I think I know that. What I would like to ask is - when you apply a profile and the display changes, what exactly changes and where is this change taking place, since the image R,G,B are not changed?
