Looking for Advice

I am trying to replace the plate on my Gitzo 5 series tripod with a Markins TH-500 replacement plate. A while back when I replaced the plate on my Gitzo 3 series tripod with the appropriate Markins replacement plate, I had no problem. However, this time I've run into a problem.

One of the legs comes off without a problem using the star wrench provided with the tripod. However, the screws on the other two legs are tightened down so tightly that I can't budge the screws, even simultaneously using two of the star wrenches on the opposing screws on a leg.

I'd be most appreciative for any suggestions how I might get them unscrewed so I can replace the plate.
