Camera Support for Overhead Shots

I realize that the majority of the members of this forum specialize in wildlife and landscape photography, but what do you folks use when you need to shoot a subject from above? I am starting to do a lot of still lifes that require a vantage point that is directly overhead.

I presently use a Velbon VS-3 which can position its centre column in a horizontal position for these type of shot, but it's not very stable in that orientation, even with extra weight on its legs. I've been looking at document copy stands but haven't found anything so far that is tall enough to give me the coverage I need. I've even been looking into converting an old commercial enlarger to use.

Both Manfrotto and Gitzo offer tripods with horizontal columns. Anyone have any experience with these?

How do you folks make your overhead shots?
