fill flash using SB800 and pocketwizards

Any advice on outside fill flash settings when taking pictures of a young man (his graduation pictures). I am using a SB800 (I also have a sb900) that will be triggered using pocket wizards. What is best setting(s) on flash and on my D300 camera (should I use Manual mode?) I have a flash meter but when I try to use the TTL mode on the flash, I seem to get inconsistent results ( unpredictable results). The photos will be taken fairly early in the morning, so I won't have to overpower the sun. If I use A mode on flash, how can I adjust the aperture on the flash unit (or can I ) to match the desired aperture on the camera.
I will be backlighting the subject, but want to use fill flash (off camera) to add dimension to his face. Would manual settings be best both on camera and on flash? Thanks for your help.
