Using non-AI lenses on F4S

Do non-AI lenses stop down when the shutter is tripped, or do they remain at full aparture? I realize I can meter in stopdown mode, but since I have a spotmeter and am going to shoot in manual mode, I would prefer to just set my f-stop and shutter speed and take the photo. Is this the way the F4S works or do I in fact have to depress and hold the depth of field preview button.
Thanks in advance for answering this question. I have a 24mm f2.8 non-AI that I will have converted to AI in the near future.
