How to lock the focus at hiperfocal distance?

I have been trying to use the hiperfocal distance on some pictures but I wonder how do you lock the focus at some point when using a tripod? The option to lock focus with the AE/AF button is not very useful, because you need to keep the pressure on the button for the focus to remain locked (unlike the AE lock option that can be locked with a single touch until the moment of shooting). The solution I have addopted until now is focusing at the point I want with autofocus and then change the focus mode to manual, then recomposing the image and shoot.

Are there other options with the F80? What do you do to lock the focus on a certain point of the image when using the tripod?
