Shooting with both and money-talk aside I would offer the following comments:
With the lower resolution of the D600 your margin for cropping is limited and you need to use zooms to do near final framing as you shoot. Because any zoom lens will give you an image quality inferior to that of a good prime your image quality will be accordingly.
With the higher resolution of the D800 I advice using it with the best available primes. This gives you plenty of resolution and detail to crop in post if necessary without loss of image quality.
I use both cameras, a D800E with a 35mm or an 85mm prime lens and a D600 with a 70-200 or 100-400 zoom. I can easily tell the difference in image quality between the two setups.
