A choice like this is not in a vacuum, the environment that the selected camera will live with makes a difference. One important environmental fact is the current and future commitment to lenses. The D800 deserves very good lenses, although it will perform fine with any lens that worked on your D300s. My bias is towards the D800 for ultimate IQ, AF and detail but the D600 seems like better compromise between most typically needed features. The AF will be good but not like the D800. The low light performance will be about the same, very good. The low iso DR, needed for optimum landscape and architecture will be great on both. The weight for travel is lower for the D600 which is becoming more and more important as airlines keep tightening restrictions on carry on weight.
The button placement and mechanical layout will be more familiar to the D300 with the D800 which is missing more dedicated buttons.
Unless you have a compelling reason to spend the additional $900, I would suggest the D600 for IQ reasons and value. If it is more of a "last camera I will buy for a very long time" situation, I would get the D800, in fact I did.
