You've done a great job of listing the significant differences between the D600 and D800/E which should be helpful for others trying to make the same decision.
However, I'm not sure I understand how the D600 made it easier to get these shots compared to a D800. How did you "reconfigure" the D600, what camera configurations did you change "quickly" that you couldn't have also done on the D800?
Also, while more controlled conditions are necessary to get the full potential of the D800, couldn't one use the D800 handheld and reduce the image size in post processing, thus basically simulating shooting with the D600? Of course, one would have to deal with the larger D800 file sizes to do this.
