Bruce - you're going to wrestle with this one for a while. While the D700 is very good, the D600 is better in many respects. The larger file size and improved AF system are big steps forward. Low light performance and dynamic range are better. But all of these differences are incremental changes and probably have relatively little impact on the images you put on the wall.
From a practical standpoint, similar controls and common batteries are big pluses. There's no real need to rush to sell your current gear - the drop in value has occurred and further declines will be slow on the D300. The D700 will likely continue to decline in value but is helped by the D600 being the cheapest FX substitute.
I think your decision to sit tight for now is a good one, but you'll probably be looking at multiple upgrades again.
