Possible live-view aperture work-around?

I dont have a d600 yet though plan to get one. I'm a bit confused because on my D300s, If it is in S mode, it's possible to manually select shutter speed setting and camera will automatically adjust aperture accordingly. If it is in A mode, it's the opposite. I don't see how one can manually select an aperture setting if the camera is set to P mode.

Just my 2 cents.
