OK, well that was interesting. I don't have a D600, so I tried it with the same architecture D7000... and what you describe works! I made sure to have the video recording while doing so, and in playback you can see the film get darker and lighter. And while filming you can also see the aperture changing on the info. display on the rear LCD. You can hear me clicking like mad in the resultant video though!
I certainly hadn't seen that tip anywhere previously - well done!
