You should find that 3 shots ± up to 3ev should be perfectly adequate and absolutely nothing to worry about.
The other Dx00 cameras allow up to 9 shots but with a maximum 1ev interval. That means D800 is capable of up to ±4ev and D600 is capable of ±3ev. That's not much material difference and you can adjust exposure manually on the rare occasion where this doesn't work (which would actually be outside my experience in real-world shooting).
If you're not convinced, just search "bracketing" in any of the Dx00 forums and find the many threads of people wishing it worked like the D600 does.
