With some types of fluorescent tube, the colour temperature of the light changes rapidly with the cycling of the electricity supply. It's too fast for the eye to detect, but will be picked up by the camera. I suspect this is causing the variation you're seeing, so I wouldn't worry about it until you've taken some more shots in daylight or using flash
