I have been doing exactly the same thing for all my non-critical and personal shots. I still shoot wedding ceremonies and formals in raw, though.

I have found exactly the same thing. I found that turning on Active D-Lighting in the 'High' or 'Extra High' setting helps a lot.

I totally agree. I used to shoot with a medium format Mimiyaflex about a hundred years ago, and it captured extraordinary detail. The D800 has brought back that incredible level of detail for me.
