Removing the lens just lets more light hit the focusing screen - particularly if the removed lens has a slow aperture. For me, this makes it easier to see the AF area markings. It also ensures that the eye is not confused by any surface features on the wall being pointed at, but that could be achieved with a lens mounted, by de-focusing it.
