I use the combo every day. It's mainly a viewfinder appearance issue. Because the rear element of the 70-200 VR is set further forward into the lens barrel, you'll notice some dark corners in the viewfinder, but NOT in photos. Image quality from this lens is remarkably good.
Look at Nikon's own MTF chart for the lens and you'll see that outer edges of the 70-200 are a bit soft. This sort of minor softness at the outer couple of millimeters of the lens is typical of this sort of zoom from all makers. In my view it's irrelevant in practical use.
All in all, the D700/70-200 f/2.8 VR combo is superb. I also use my D700 with my old 80-200mm f/2.8 AF-S, which may even be a hair better than the 70-200, but without the obvious benefit of VR.
