Correct me if I'm wrong, (I'm new to Nikon mount stuff and the S1 Pro) but according to the manual, you can use AI-S lenses, you just can't meter with the camera. (Set the camera on M and set the shutter speed on the camera and the aperture on the lens, I'm assuming. (I'm planning on trying it with a Nikkor-S 35mm f2.8 that I have.)

Also, the S1 Pro was a ground breaking 6.1 megapixel (not 3MP) camera in 2000. See: http://www.dpreview.com/reviews/fujis1pro
