Isn't under exposing for a wedding dress the general rule of thumb? I believe there have been several discussions on this in the Wedding Photo discussion group.

I don't know about bracketing to componsate for white balance. Manually adjusting your white balance for the lighting that you will be using might be a better idea. The impression that I get from my experiense and from every review that I've read is to abandon auto-white balance. For now I'm going to be manually tweeking the white balance. Moose Peterson\'s article on white balance is an interesting read on the topic.
