The idea that "the resolution/IQ is so high (of the D800) that you almost have to use a tripod" is complete bunk. A lot of folks feared this before it came out. I am your enthusiast/amateur photographer and there is absolutely no problem using the D800 as a handheld camera, and this is particularly true with the three f4 lenses Nikon has come out with in the past year or two with exceptionally good VR.
As I read this I have a lot of trouble seeing what the real photographic need is for anything in a higher end APC sensor camera. I came up the D100/200/300 route then to the D700 and D800 and I don't feel abandoned at all. In fact I think Nikon has pushed me to become a better photographer.
