We really need more information about your camera's AF settings before we can comment further - in particular which AF-Area Mode (page 54 in the D200 manual) you have selected.

If, for example, you have selected Group dynamic-AF, you will not be able to select the AF point because the camera chooses one (or more) automatically.

What you say above suggests the camera is in that mode, because changing the lens to MF overrides the camera and forces it into Single-area AF - in which mode you can move the AF point.
