The D300 does not have the virtual horizon feature.

The D300s does.

On the D300s you enter Live View using the dedicated button on back of the camera (I think the D700 still has it on the mode dial.) You can cycle though information displays, including the virtual horizon, by pressing the info button while in Live View.
