Dennis, The crop area is enabled in the viewfinder when you choose DX in the Image Area menu. (not auto DX crop). It outlines the DX area while still showing the complete FX area outside the lines. If you want the DX area more clearly defined you would also change custom setting a5 AF Point Illumination to OFF which will turn the area outside of the DX area to a grey overlay on the FX area.
I just think there are too many advantages of using the D800 over the D300 to ignore. Of course if you will be constantly changing from full frame to DX crop mode two bodies makes more sense. In that case the improved resolution and cropping ability of the D7000 would be my choice.
I think at this point you have a lot of different opinions and choices and the choice is yours. I don't think you can make a bad choice.
