That's exactly the point on this spreadsheet. The author put it together in a manner that allows you to modify settings as needed and come up with your own approach. The reference to the defaults and manual are intended to make those settings easier.
For weddings, you might come up with two or three scenarios that require vastly different settings. Bridal portraits would be very near the portrait settings and be shot in RAW. Wedding images mught be shot RAW + JPEG or just JPEG for the most part. You might even have one set of settings for Shooter 1 and a separate set for Shooter 2 depending on their defined roles and equipment.
