It depends. Many of the settings relate to the way your camera works, so there would be no change. For the settings that relate to an image - mainly the picture control settings - it depends on your RAW processor. Capture NX and View NX apply the exact same settings as the camera. That means there is a lot of benefit of getting it right in camera, but you could easily make changes in post processing. With other RAW processors - such as those from Adobe - the software does its best to use the camera settings but it is not exactly the same.
My suggestion would still be to try your best to get it right in camera and use the camera's settings even if you shoot RAW.
