The NEF is taggad with the picture control settings you do set in the camera.
If you set sharpening to 6 and increased contrast and vivid color, the raw sensor data is untouched but when opened in a Nikon software, the tagged settings are executed and applied.
If you use a non Nikon software like Aperture etc, the tagged settings are not applied automatically.

So shooting raw/nef is no guarantee for sharpness etc not being applied.
