Welcome to Nikonians, I think you will like your D7000 and the 18-105mm f/3.5-4.5 AFS DX VR lens is a very highly respected kit lens.
My one lens solution would be the 16-85mm f/3.5-4.5 AFS DX VR lens. This would be my choice for a European trip. But since you have decided that the 105mm focal length isn't long enough, my next choice would be the 18-200mm DX.
Nikon does offer lots of choices now in a do-it-all zoom lens lineup so which one you get would really depend on just how much you would be using the longer reaches of those zooms.
My main lens for DX is the 17-55mm f/2.8 AFS DX lens. I shoot mainly family and travel. It's a bit on the heavy side for travel, but it produces marvelous results at the f/2.8 aperture. I'm not recommending it in your case, but just to reiterate that there are different tools for different tasks and different photographic interests.
