I have the 18-105, which I will probably sell if I don't get a macro filter & decicate to macro work. I also have the 18-200, and the 18-300. If I was going to recommend a single lens for a begineer & early intermediate, it would be an 18-200mm VR. I have had the 18-300 for only a short time, but is is noticeably heavier, and a little soft at 300 (A lot more than the 70-300mm at 300mm).
The 16-85/70-300 combo sounds good. You can hit pretty much everything from 16-300mm with good lenses. It's just the process of changing lenses in the middle of a shoot that can be a hassle. You show that you only have the D7000, so the choice of putting one lens on one camera and the other on your backup isn't available to you.
The 18-200mm lens is not perfect, but if I could only put one lens on my camera, it would be that one. Unless of course, my camera was an FX model.
