P is just regular program, camera determines best shutter and aperture given existing conditions for a proper exposure.

P* is flexible program that allow the user to change the exposure for a given conditions, while still maintaining a "correct exposure." For example a image my require say 1/250 sec @ f/8. A correct exposure at 1/2000s @ f/2.8 and 1/60s @ f/16 will yield different results (less depth of field at f/2.8 but a shutter speed that can stop a bird's flapping wings; f/16 will result in more depth of field but motion blurring stream.
