Maximum Sharpness and depth of field

I just wanted to get feel for what others do. I plan on taking a bunch of landscape pictures in a few days on a hike up mount Marcy in NY.

I plan on bringing a tripod. I have a D5000.
I have read about hyperofocal length.
With my kit lens I should be able to get decent sharpness from a couple feet away to infinity if I increase my f-stop to 32 with an 18mm focal length. I have no markers to indicate distance. I was planning on guestimating where to focus. Is this what people do or are they scientific and measure out exactly where to focus?

Also I have recently learned about diffraction limits between f/8-f/11 with my DX sensor. Does this nullify the whole idea of using a high f-stop?
Do others get multiple images with different focus planes and combine in photoshop?
