I have saved settings in U1 on my D7000. If at a later time I want to permanently change one of the settings in U1 do I do the following:
• Set Mode Dial to U1
• Make the setting change
• Set the Mode Dial to A to retain Aperture Priority in U1
• Press Menu
• Select Save User Settings
• Choose U1
• Press OK

When you go from U1 to another mode (P,S,A or M), most if not all the settings in U1 will be wiped out.
To get the settings in U1 applied to other modes ,so you can save back into U1 again in another mode, use "Save/load settings". Is in the Setup Menu about 3/4 way down.
Go to U1, save settings, go to another exposure mode (P,S,A or M), load settings. Now you can save settings back to U1 with the other exposure mode saved.

At least the auto-iso, WB, qual is saved this way. There may be other settings that are saved as well. Auto focus modes are not saved though.
