Interesting choice of what to assign to the programmable buttons. The choice of programability is indeed one of the wonderful features of the Z series Nikons.
Before my Z6, I used a D800 with the function selector ring on the top left (see image).
For me, of the four choices: QUAL: I always shoot RAW and did not often need to change this, if at all. WB: Shooting raw, I always had this set to AUTO as I knew I could always change WB in PP, so again rarely changed this. ISO: Shooting in Aperture Priority, I used ISO to vary the shutter speed. BKT: This was the feature I used the most for HDR shooting. I also liked to use the Focus Mode button, which was central to the M/AF switch on the front of the D800...
On my Z6 I have set up the following, which suits my past familiarity with the D800... AF-ON: Back Button focus - the same as D800 FN1: Auto Bracketing (As with the BKT button on D800) FN2: Focus Mode (As with the Focus Mode button on the D800)...
Video Button: Exposure Delay Mode.
Everyone is different and the capability to set up the camera to suit ones own personal preference is an endearing feature. Indeed, with further use and as I get more used to using the Z6, I may well change these key options.
These setting work for my style of shooting at the moment. Of course, others may like to set up differently and isn't it wonderful the flexibility that is built into the Z6/7 to allow this.

I'm just loving my Z6!
