"Converting RAW to jpeg color space"

When I convert files to jpeg from RAW, should I change my color space to sRGB?

Lee Anne, that depends on where you plan to display those jpegs. If they are destined for the web or to send via e-mail then yes. Otherwise, I would leave them in a wider color space such as Adobe RGB 1998, ProPhoto RGB, or similar.

Or possibly printing. Some print shops can't support embedded color spaces.

Bear in mind there are two separate questions invovled: what is the color space of the image, and is the color space profile embedded.

I recommend you never save a JPG in other than sRGB unless you embed the profile, as almost everything will assume an image without embedded profile is sRGB and will mis-display if not.
