"Manual Control of Pop-up Flash on D5300"

In Manual Flash mode, I need a rapid way to vary the power out for the flash. The only way I see is about a five-step procedure using e1 in the Custom Menu.

In Aperture Mode I can Set the displayed FEC with the Flash closed but the value is reset to zero or grayed out when the flash is opened. p93 instructions do not work for me. The flash FEC remains grayed out.

(I would both the Flash FEC and Spot Metering to be assignable to a Function button.)
