Does anyone know of something up-to-date documenting Nikon bellows compatibility with cameras? I've found several discussions around the web with Google, but little that's definitive and nothing recent discussing more recently released models such as the D800 and the D600. Does anyone know of such a thing? Thanks.

Laurence, I can personally vouch for the PB-6 being fully compatible with the D800/E (without grip attached), although it IS necessary to make use of the rotating ring while actually mounting, and dismounting, the camera body to/from the bellows. The ring has click stops at 90 degree intervals.
As a footnote, you probably realise that it is necessary to stop down the lens to your selected aperture prior to releasing the shutter, by depressing a lever on the lens standard.
I use the PB-6 + PS-6 with the 60mm Micro Nikkor for slide and 35mm negative copying.
