I went D200-D300-D700-D7000 and am still shooting the latter 3.

1. For a wedding photographer add a D700 no question (I agree with Richard) but as Sirraj indicates it is a costly transition
2. With regard to waiting, probably doesn't hurt. But it may be better to swap one D90 for a D700 now and then later swap your 2nd D90 for either a D800 or D7000 depending on features (or maybe a bargain used D3S by then ).
3. D7000 is great but not as "maintenance free" as the D700 (so I agree with RRRoger there). I find myself needing a little more care in PP for D7000 but resulting images are great. D700 is such an easy camera to shoot and process (it is a dream camera).
4. D700 is cheap now and D800 will not be and will be difficult to obtain.

Good luck in your journey!

Best regards, SteveK
